Named in honor of Jean Baptiste Point du Sable, the father of Chicago, Sable Kitchen & Bar is a nod to the effortlessly elegant America of the 1940s: timeless yet brimming with promise. Located adjacent to Hotel Palomar Chicago in the River North neighborhood, Sable’s design is inspired by the art and science of the cocktail: the lanterns that light the grand 40-foot bar subtly recall the shape and structure of molecules, while the exhibition kitchen brings a buzzing behind-the-scenes energy to the dining room. Back in the day, sourcing ingredients locally was just common sense, and Sable abides by that principle today in both the kitchen and the bar. Because quality never goes out of style.
