  
Master Sommelier Emily Wines
Emily Wines became one of only 96 people in the United States to earn the Master Sommelier designation in 2008. She was awarded the lauded Remi Krug Cup for passing all three sections of the certification exam on her first attempt, and is only one of two women to ever achieve this remarkable feat.
With that said, allow us to introduce you to Emily Wines, the purveyor of Sable's amazing wine list.
Sable's Prestigious Wine List
Emily's gift for finding great wine resulted in her appointment as Master Sommelier for all Kimpton Hotels & Restaurant properties. In respect to Sable, her talents are evidenced by a cellar that is comprised of roughly 74 celebrated bottles of wine. They're labels that for the most part don't require foreign language degrees. They encompass wines of great value, hidden discoveries and several classics. What's more, many selections come in half-bottle sizes so that guests may sip and sample a broader range.
Perhaps just as important is Emily's selection criteria. More than a third of the cellar is bottled by wineries using sustainable, organic and/or biodynamic methods.
About Sable's Master Sommelier
Emily grew up outside of Seattle, and spent time living in San Luis Obispo, Calif., where she developed first-hand knowledge about the wines of California's Central Coast. In pursuit of a more serious wine career, Emily moved to San Francisco and joined the Fifth Floor restaurant in 2000. Under the mentorship of Rajat Parr, Emily was promoted within nine months to Assistant Sommelier. During her tenure, Fifth Floor's wine list earned the prestigious Grand Award from Wine Spectator magazine and the James Beard Foundation nominated the restaurant for Outstanding Wine Service award.
A passionate advocate for wine education, Emily travels the country spending time in Kimpton cities educating restaurant staff about wine varietals and hosting Shades of Green training sessions to shed light on the value and importance of eco-friendly wines. Additionally, she hosts a monthly Sommelier Smackdown at NIOS in New York City and a regular Wines on Wine consumer tasting class at Fifth Floor in San Francisco.
